Icon16 Which should I buy large or small Morels

At $50lb here in the AZ Gourmet supermarket, I want to buy the best. As a chef which is better large or smaller morels. I know you hunters like them big but is there a taste difference? Or is there a better value between buying large or smaller Morels?

I think the smaller ones are packed full of flavor more so
than the larger ones. But if you want to stuff some
your going to want some bigger ones too.

Hi Minor:

Thanks for your suggestion. I personally would never stuff a Morel, like caviar I think they are best simply prepared with minimal additional ingedients

I like them better when there under 3 inches, but i'll eat any i find. Like Paul said, they seem to have more flavor and to me the texture is better in the smaller one's.

I prefer the big ones as they are pretty tasty and more meaty, but the smaller ones are very tasty also.

2" to 3" blacks are the best you'll get
